  • 2 cup Flour
  • 1 tablespoon Baking Powder
  • 1 teaspoon Salt
  • 1 tablespoon Seafood Seasoning (optional)
  • 1½ cup Cold Guinness Beer
  • ½ cup Cornstarch
  • 2 qt Oil for Frying
  • Malt Vinegar (for serving)
  • Lemon Wedges (for serving)

Instructions

Preparing the Batter

1. Sift together the flour, baking powder, and salt. Include any optional seasoning, if desired, at this point. 2. Mix in 1 1/2 cups cold Guinness beer and stir until a smooth batter is formed. You may need a little extra beer to reach the desired consistency, which should be similar to a pancake batter.

Preparing the Fish

1. Cut the cod into equal sized portions, then pat dry with paper towels. 2. Dust both sides of the fish pieces with cornstarch and shake off excess cornstarch. 3. Dip the fish in the batter and fry in 350-degree oil until the fish is cooked through and the batter is golden. This typically takes 3-5 minutes. 4. Let the fish cool for a few minutes before serving.
